A Review

It’s been a few months since I posted last. Ten, in fact.

I’ve never been good at staying busy AND blogging. But I’ve had so much fun cooking and Masterclass things going on lately that I’m picking it back up. Even though I didn’t keep track of it here, I’ve had a SUPER busy cooking year and I’ve learned so much. I can’t wait to share all of it!

This year I focused on new Masterclasses like Massimo Botura and Thomas Keller, as well as using cheap, odd parts of meat – cow tongue, hearts, liver, etc. Stay tuned, in the next few months I’ll also be experimenting with brains, Rocky Mountain Oysters, and anything else the butcher can throw at me.

I made a big push this year to improve plating. I think my pies have come a long way especially, but dinner plating is my main focus. I’ll be doing a comparison post of items I cooked last year as to ones I’ve been cooking lately.

Ever since I began learning how to cook via cooking shows, I always held up the goal of one day auditioning for a show like MasterChef. Each year, I feel so much closer. A week ago, the MasterClass team encouraged me to audition after seeing my plates and hearing me talk (more on that whole thing later) and it’s made me put together some plans on what I need to do over the next year to feel fully ready to go try.  It would be a dream come true just to do the first audition, even if I fail, so why not attempt it? I’m hoping I’ll be able to audition in 2021.

I’m thrilled with this year’s progress. Last year I made huge strides, but this year I learned how to refine them as well. I’ve enjoyed making foods from things that have grossed out much of my family and friends, while the end results look and taste delicious. I’ve done many new twists on old favorites and discovered some easy but amazing dinners that are elevated and refined.

Over the next few weeks, I’ll be going over my favorite cooking points of this year and showing my favorite recipes. Come January, I’ll be giving myself different challenges both weekly and monthly.

I’m about to embark on my third year of Masterclass. It has completely changed my life as well as my family’s. I’m so thrilled to be able to learn techniques, refinement, and cooking from the greats.
